What I ate Wednesday

In the interest of blogging more regularly I thought that it might be helpful to add a weekly post. In the past I've done top three Tuesday which was ideal because it was super versatile, I only needed to my favorite three of any given category. I might doing something similar in the future but for now I thought I'd highlight one meal.

This week: Zucchini "Pizza"*


I call it a pizza but really not super pizza-ish. It's a shredded zucchini base topped with arugula pesto, caramelized red onions, goat cheese crumbles, and prosciutto. It might not sound enticing, my mother thought I was crazy but even my veggie-phobic dad enjoyed it. Delicious!

Crust:
-shred one zucchini and press as much liquid out as possible
-add with 1/3 cup mozzarella cheese (I used almond milk cheese mozzarella)
- add one egg and mix thoroughly
-spread on a pizza pan and bake at 400* for ten minutes

Pesto:
-blend arugula (I used 4 cups) with olive oil (will depend on amount of arugula but I used 1/3 cup)
-add 2 TBSP lemon juice
-add 2 cloves of garlic
-add 1 TBSP Parmesan cheese.
